Born from a desire to carefully cultivate a special relationship with those that enjoy the products we cultivate with similar attention on our estate.
All the ingredients we offer are grown locally, in harmony with the environment and our timeless land, meeting Italian quality-assurance DOC and DOP specifications. All the products you taste at the Bistro are ours: grown, harvested and directly transformed into preserves by us.
On the hills of the Val di Noto, a few kilometers from the Baroque city of Noto, lies our Busulmona Farmhouse, surrounded by thirty hectares (75 acres) of land. Over the past 20 years, the Di Pino family has managed the transformation of non-productive areas of the estate into fields and orchards to achieve a collective dream: the entire family are now active members within the company and the Bistrot.
Our 100% locally grown products
Fresh fruit from our citrus groves, carefully picked at their moment of ripeness, immediately processed and slowly cooked at low temperatures and low pressure. In the process, every part of the fruit is precious, from the fruit's juice to its peel, allowing us to fully enjoy all its nutritional properties and natural sweetness.
Preserves resulting from the careful selection of the harvest from our farm: whether juicy Pachino cherry tomatoes to our ripe artichokes, aubergines (eggplant) and olives, all are harvested with care, at their moment of ripeness and immediately cooked at low temperatures and low pressure, in order to preserve their sweetness and the nutritional characteristics of the volcanic soil.
From honeycombs in Val di Noto, we extract, strain and crystallize our honey at low temperatures and under careful supervision. The aromatic honeys represent the fruit of the bees's encounter with the cultivated citrus crops on the Busulmona estate.
The Moresca e Nocellare Etnea olive orchards growing across the warm hills of Val di Noto give birth to an oil that fully embodies the flavors and aromas of an incomparable land.
Ideal for your culinary experiments, our Aromatic Oils introduce blended citrus and herbs from our estate.
With the reforestation of 10 hectares of almond trees, we now grow four almond varieties, respectively Pizzuta, Romana, Tuono and Ferragnes. Pizzuta and Romana are highly sought in the confectionery industry for their unique essential oils. Tuono and Ferragnes, both tender nuts are ideal for shelling fresh at the table with a normal nutcracker.
The unique soil and topography of the Noto "terroir" meet great wine varieties, such as Nero d'Avola, Syrah, Petit Verdot, Grillo and Cataratto, to create intriguing results full of personality. To top it off, our distinct climate allows us to harvest perfectly ripe grapes and produce fine wines characterized by their aromatic and elegant personalities.
